Another thing to keep in mind are the ac hard and soft caps, each class has a different cap but once you reach that mark then other stats become more viable.

I've also always heard that AC is more or less broken on Emu, but the "BIS" gear is all HP/AC (as far as I can tell) maximizers rather than, for instance, some of the items with +defensive skills. I was just trying to see if I'm missing something. For instance after my first time clear I have gear choices like: Orb of evasion from VT (75ac, 400hp, 16% dodge, 4 avoidance... whatever that is) or Serrated dart of energy (96ac, 780 hp). Cloak of maneuvering from VT (75ac 460hp 10% dodge) or Platinum cloak of war (120 ac, 740 hp, 9 heroic stam, 13 avoidance) In both cases I'm trading a defensive skill modifier for HP and AC (and avoidance I guess, but I quit live well before that was a thing so I really don't have a feeling for what that does). I feel like the time gear should be much better and maybe it's just because i'm not totally clear on how to weight the +skills, but I feel like those bonuses are pretty big.

The skill modifiers are pretty important, imo. I actually kept my PoTime BP until I got tunat BP because time BP has 16% riposte mod on it and imo the abysmal BP just wasn't a large enough upgrade to justify losing 16% riposte (or 8% because one of the GoD augs has riposte on it, I believe).
But you also need to be aware that the % mods don't stack, only the highest %. So if you have two %dodge mods, upgrade one of them to time for sure and then keep the other if you so desire. I honestly haven't done parses to compare the difference, but a gain of ~30 ac and 300hp is pretty significant and may compensate for the % dodge mod. Also, avoidance is exactly what it sounds like... avoidance of incoming melee damage. The higher your avoidance, the more likely you are to avoid incoming melee hits. I don't know the exact formula, but it's something like (10 pts = 1% avoidance?)
Hope this helps!

Tynnonium is right, the skill modifiers are very important. a % chance to dodge is better than an extra 100 or 200 ac, same for parry, riposte and defense.

What I have is Bite of the dark serpent and fragment of time In my bbob I use the get out the way aug, and waiting to put the ferocity one and the ultimate imperium aug Thanks Yunke. I grabbed Get Out The Way (funnily enough, I was already saving aa's for quarkens - had 2200) and put that in as I don't have bbob yet, figure I can just move the aug later on. I'm not sure what slots bite of the dark serpent and fragment of time are so I will grab whichever one fits into the remaining slot 8 i have on the quarkens and go from there. I am currently offhanding it, with Darkblade of the Warlord mainhand - I'm not sure if that is ideal but it is working for me for everything up to and including PoTime so I am pretty happy. I must say, the difference is incredible. I went from draining my healers on Quarm and having the last 10-15% or so be dicey to having them barely touch their mana pools.

Has anyone done any parsing to find out the weighting on different stats?
Most people stack AC, and I have found myself doing that too, but is that always the way to go or should I stack some spell shielding on my casters since they get hit less often but cop spells alot more?

I was using that duo till I got my second Purplesword. Its a great duo till you can get it Anyway, BBoB is so cheap now and will safe you lots of farm / aa from the Quarkens. I was lucky and got one droped and one for 50kpp, but now I have one parked at bank Yeah, the lifetap proc is awsome, but you can really replace it with the augs you can buy without problems, have more dps and better stats and be a better tank

As war, im looking to max my ac / spellshield / Dot shield / avoidance etcetc ( all deff shit ) plus hp With my shaman I just go ahead to get more resis / spellshield / dotshield and HP for the AoE things we found. As my box ( shaman ) rarely go into melee / tank / get hits, I dont care about AC rigth now. Anyway, he's not a tank, will die with 3k or 6k ac

You'd be surprised, a shaman can take a beating and do respectable dps with Panther procs =)
